**Ingredients**  

*For the Stew:*  

- 2 lbs bone-in chicken (thighs, breasts, or a mix)  

- 2 tbsp olive oil or butter  

- 1 medium onion, diced  

- 3 carrots, sliced  

- 2 celery stalks, sliced  

- 3 garlic cloves, minced  

- 1/3 cup all-purpose flour  

- 4 cups chicken broth (low-sodium preferred)  

- 1 tsp dried thyme (or 1 tbsp fresh)  

- 2 bay leaves  

- Salt and pepper to taste  

- 1/2 cup frozen peas (optional)  

- 1/4 cup heavy cream or whole milk (optional)

**Instructions**  


1. **Cook the Chicken:**  

   - Heat oil in a large pot or Dutch oven over medium heat. Pat chicken dry and season with salt and pepper. Brown chicken on all sides (5-6 minutes total). Remove and set aside.  


2. **Sauté Vegetables:**  

   - In the same pot, add onion, carrots, and celery. Cook 5 minutes until softened. Add garlic; cook 1 minute.  


3. **Make the Roux:**  

   - Sprinkle flour over veggies; stir to coat. Cook 2 minutes to remove raw flour taste.  


4. **Build the Stew:**  

   - Slowly pour in broth, stirring to avoid lumps. Add thyme, bay leaves, and browned chicken. Bring to a simmer, cover, and cook 25-30 minutes until chicken is tender.  


5. **Shred Chicken:**  

   - Remove chicken, discard bones/skin, and shred meat. Return to pot. Stir in peas and cream (if using). Simmer 5 minutes. Adjust seasoning.  


6. **Prepare Dumplings:**  

   - In a bowl, whisk flour, baking powder, salt, and parsley. Cut in butter until mixture resembles coarse crumbs. Stir in milk until *just* combined (do not overmix).  


7. **Cook Dumplings:**  

   - Drop golf ball-sized dough portions into simmering stew. Cover tightly, reduce heat to low, and cook 15-18 minutes (do NOT lift lid—steam cooks dumplings!).  


8. **Serve:**  

   - Discard bay leaves. Garnish with parsley. Serve hot in bowls.
