Homemade Lobster Roll Recipe
Creamy Maine-style or buttery Connecticut-style—choose your favorite!
Ingredients
For the Lobster:
- 1.5 lbs (680g) cooked lobster meat, chopped into bite-sized chunks
*(or 4 live 1.25-lb lobsters, boiled/steamed and shelled)*
For Maine-Style Dressing:
- 1/4 cup mayonnaise (good quality, like Hellmann’s)
- 1 tbsp fresh lemon juice
- 1/4 cup finely chopped celery
- 2 tbsp chopped chives or parsley
- Salt and black pepper, to taste
- Optional: Dash of hot sauce or pinch of paprika
For Connecticut-Style:
- 4 tbsp unsalted butter, melted
- 1 tsp fresh lemon juice
- Salt and black pepper, to taste
For Assembly:
- 4 split-top hot dog buns (New England-style, if available)
- 2 tbsp softened butter (for toasting buns)
- Optional: Butter lettuce leaves
Optional Garnishes:
- Lemon wedges
- Extra chives
- Crispy potato chips or fries (for serving)

1. Prepare the Lobster Meat:
- If using live lobsters: Bring a large pot of salted water to a boil. Add lobsters headfirst and cook for 8–10 minutes. Remove, cool, then crack shells and extract meat. Chop into chunks.
- If using pre-cooked meat: Skip boiling and chop meat directly.
2. Maine-Style Lobster Salad:
- In a bowl, gently mix lobster meat, mayo, lemon juice, celery, chives, salt, pepper, and optional hot sauce/paprika. Chill for 15 minutes.
3. Connecticut-Style Warm Lobster:
- In a skillet over low heat, toss lobster meat with melted butter, lemon juice, salt, and pepper until just warmed (1–2 minutes). Do not overcook.
4. Toast the Buns:
- Spread softened butter on the outsides of the split-top buns. Heat a skillet over medium and toast buns, buttered-side down, until golden (1–2 minutes).
5. Assemble:
- Maine-Style: Line toasted buns with lettuce (optional). Spoon chilled lobster salad into buns.
- Connecticut-Style: Fill warm toasted buns directly with buttery lobster meat.
6. Serve:
- Garnish with lemon wedges and chives. Serve immediately with chips or fries!
Tips:
- For best texture, avoid overmixing the lobster meat.
- Substitute celery with diced fennel for a twist.
- Add a pinch of Old Bay seasoning for a Chesapeake flair.
