 Classic BBQ Pork Ribs


Ingredients

- 2 racks pork ribs (baby back or spare ribs)  

- Dry Rub:  

  - 3 tbsp brown sugar  

  - 2 tbsp paprika  

  - 1 tbsp garlic powder  

  - 1 tbsp onion powder  

  - 1 tbsp chili powder  

  - 1 tsp black pepper  

  - 1 tsp salt  

  - 1 tsp cumin (optional)  

- BBQ Sauce:  

  - 1 cup ketchup  

  - ¼ cup apple cider vinegar  

  - ¼ cup brown sugar  

  - 2 tbsp molasses or honey  

  - 1 tbsp Worcestershire sauce  

  - 1 tsp smoked paprika  



 Steps  

1. Prep the Ribs:  

   - Remove the membrane from the back of the ribs for tenderness.  

   - Pat ribs dry with paper towels.  


2. Apply the Rub:  

   - Mix all dry rub ingredients. Generously coat both sides of the ribs.  

   - Let sit for 1 hour (or refrigerate overnight for deeper flavor).  


3. Set Up the Grill/Smoker:  

   - Use indirect heat (pile coals on one side or use a smoker).  

   - Maintain a temperature of 225–250°F (107–121°C).  

   - Add wood chips (hickory, apple, or cherry) for smoke.  


4. Cook Low and Slow:  

   - Place ribs meat-side up on the grill, away from direct heat.  

   - Smoke for 3–4 hours, spritzing with apple juice or water every hour to keep moist.  


5. Sauce and Finish:  

   - Mix BBQ sauce ingredients in a saucepan; simmer 10 minutes.  

   - In the last 30 minutes of cooking, brush sauce onto ribs.  


6. Rest and Serve:  

   - Let ribs rest 10–15 minutes before slicing.  

   - Serve with extra sauce and sides like coleslaw or cornbread.  


Tips 

- Don’t Rush: Low temperature and patience are key for tender meat.  

- Check Doneness: Ribs are done when meat pulls back from the bone and reaches ~195°F (90°C).  

- Vegetarian Option: Grill smoked tofu or portobello mushrooms with BBQ sauce.
