Homemade Buffalo Wings Recip

 Homemade Buffalo Wings Recipe

Ingredients:

- Chicken Wings:

  - 2 lbs (900g) chicken wings, split into drumettes and flats (tips removed)

  - 1 tbsp baking powder (aluminum-free, optional for baking)

  - 1 tsp salt

  - 1/2 tsp black pepper

  - Oil for frying (if deep-frying)

- *Buffalo Sauce:*

  - 1/2 cup Frank's RedHot Sauce (or similar)

  - 1/3 cup unsalted butter

  - 1 tbsp white vinegar or apple cider vinegar

  - 1/2 tsp garlic powder

  - 1/2 tsp Worcestershire sauce (optional)

  - Pinch of cayenne pepper (optional, for extra heat)

- *Serving:*

  - Celery sticks

  - Carrot sticks

  - Blue cheese or ranch dressing

**Instructions:**

1. **Prep the Wings:**

   - Pat wings dry with paper towels. For extra crispy baked wings, toss with 1 tbsp baking powder, salt, and pepper. Let sit uncovered in the fridge for 1 hour.

2. **Cooking Methods:**

   - **Deep-Frying:**

     - Heat oil to 375°F (190°C). Fry wings in batches for 10-12 minutes until golden. Drain on a wire rack.

   - **Baking:**

     - Preheat oven to 425°F (220°C). Place wings on a wire rack over a baking sheet. Bake 25 minutes, flip, then reduce to 400°F (200°C) and bake 20-25 more minutes until crispy.

   - **Air Frying:**

     - Cook at 400°F (200°C) for 25-30 minutes, shaking halfway.

3. **Make the Sauce:**

   - Melt butter in a saucepan. Stir in hot sauce, vinegar, garlic powder, Worcestershire, and cayenne. Simmer 2 minutes.

4. **Coat the Wings:**

   - Toss cooked wings in sauce immediately after frying/baking. Serve hot with veggies and dressing.

**Tips:**

- **Crispy Skin:** Baking powder helps dry the skin. For fried wings, double-fry (first at 275°F/135°C for 10 mins, rest, then 375°F/190°C for 5 mins).

- **Sauce Adjustments:** Add honey for sweetness or more butter to mellow heat.

- **Dietary Options:** Use margarine for dairy-free; ensure hot sauce is gluten-free.

**Serves:** 2-4 as an appetizer.

Enjoy your spicy, tangy Buffalo wings with the perfect crunch! 🍗🔥
