Instructions
1. Marinate the Chicken:
- In a bowl, mix buttermilk and hot sauce. Add chicken, ensuring it’s fully submerged. Cover and refrigerate for at least 1 hour (or overnight for maximum tenderness).
2. Prep the Dredge:
- In a shallow dish, combine flour, paprika, garlic powder, onion powder, cayenne, salt, and pepper. Taste and adjust seasoning if needed.
3. Fry the Chicken:
- Heat 2 inches of oil in a deep skillet to 350°F (175°C).
- Remove chicken from buttermilk, letting excess drip off. Dredge in flour mixture, pressing to adhere. For extra crunch, dip back into buttermilk and dredge again.
- Fry chicken in batches for 5-7 minutes per side (until golden and internal temp reaches 165°F). Drain on a wire rack. Keep warm in a 200°F oven.
4. Make the Waffles:
- Preheat waffle iron.
- In a bowl, whisk flour, sugar, baking powder, and salt. In another bowl, beat eggs, buttermilk, melted butter, and vanilla.
- Combine wet and dry ingredients until just mixed (small lumps are okay).
- Pour batter into the iron and cook until golden and crisp (per iron instructions).

Tips
- Crispy Chicken: Double-dredge (flour → buttermilk → flour) for extra crunch.
- Gluten-Free: Use GF flour for both chicken and waffles.
- Time-Saver: Use store-bought fried chicken in a pinch.
- Spice Level: Adjust cayenne or add a dash of honey for sweet-heat balance.
