Ingredients (Serves 4):
- 4 boneless, skinless chicken breasts (pounded to ½-inch thickness)
- 1 cup all-purpose flour
- 2 large eggs (beaten)
- 1 cup Italian-seasoned breadcrumbs
- ½ cup grated Parmesan cheese (plus extra for topping)
- 1 tsp garlic powder
- 1 tsp dried basil
- Salt & pepper to taste
- 1 ½ cups marinara sauce (store-bought or homemade)
- 1 ½ cups shredded mozzarella cheese
- ¼ cup olive oil (for frying)
- Fresh basil or parsley (optional, for garnish)

Instructions:
1️⃣ Prep Chicken:
- Pound chicken breasts evenly (use a meat mallet or rolling pin). Pat dry with paper towels. Season both sides with salt & pepper.
2️⃣ Breading Station:
- Set up 3 shallow bowls:
- Bowl 1: Flour mixed with garlic powder.
- Bowl 2: Beaten eggs.
- Bowl 3: Breadcrumbs mixed with ½ cup Parmesan and dried basil.
3️⃣ Coat the Chicken:
- Dredge each breast in flour → dip in egg → press into breadcrumbs to coat.
4️⃣ Pan-Fry:
- Heat olive oil in a skillet over medium heat. Cook chicken 3–4 minutes per side until golden (not fully cooked through). Transfer to a paper towel-lined plate.
5️⃣ Assemble & Bake:
- Preheat oven to 375°F (190°C).
- Spread ½ cup marinara in a baking dish. Arrange chicken in the dish. Top each piece with marinara, mozzarella, and a sprinkle of Parmesan.
- Bake 20–25 minutes until cheese melts and chicken is cooked through (165°F internal temp).
6️⃣ Finish & Serve:
- Broil 1–2 minutes for bubbly cheese (optional). Garnish with fresh herbs. Serve over pasta, with garlic bread, or a green salad!
Tips:
