Easy Homemade Meatloaf Recipe
Ingredients:
For the Meatloaf:
- 1.5 lbs (680g) ground beef (85% lean for juiciness)
- 1 cup (90g) breadcrumbs (or crushed crackers/oats as a substitute)
- 1/2 cup (120ml) milk (or broth/water)
- 1 large egg
- 1 small onion, finely chopped (about 1/2 cup)
- 2 garlic cloves, minced
- 2 tbsp ketchup
- 1 tbsp Worcestershire sauce (or soy sauce)
- 1 tsp salt
- 1/2 tsp black pepper
- Optional: 1/2 tsp dried thyme or parsley
For the Glaze:
- 1/4 cup (60g) ketchup
- 2 tbsp brown sugar
- 1 tsp apple cider vinegar or mustard (optional for tang)
Instructions:
1. Prep: Preheat oven to 375°F (190°C). Line a loaf pan with foil or lightly grease a baking sheet.
2. Mix Ingredients: In a large bowl, combine ground beef, breadcrumbs, milk, egg, onion, garlic, ketchup, Worcestershire sauce, salt, pepper, and herbs (if using). Mix gently with hands or a spoon until just combined—do not overmix.
3. Shape: Transfer mixture to the loaf pan or form into a loaf shape on the baking sheet (about 9x5 inches).
4. Bake: Place in oven and bake uncovered for 45 minutes.
5. Glaze: While baking, mix glaze ingredients in a small bowl. After 45 minutes, spread glaze over the meatloaf. Return to oven and bake 15 more minutes, or until internal temperature reaches 160°F (71°C).
6. Rest: Let meatloaf rest 10 minutes before slicing. This keeps it juicy!
Tips:
- No Breadcrumbs? Use 1 cup crushed saltines, oatmeal, or even cooked rice.
- Extra Flavor: Sauté onions and garlic in 1 tbsp oil for 5 minutes before adding (optional).
- Storage: Leftovers keep in the fridge for 3-4 days. Freeze slices for up to 3 months.
