 Ingredients:

 For the Cauliflower Wings:

- 1 large head cauliflower, cut into florets

- 1 cup all-purpose flour (or gluten-free flour)

- 1 cup milk (or plant-based milk for vegan)

- 1 tsp garlic powder

- 1 tsp smoked paprika

- ½ tsp salt

- ½ tsp black pepper

- 1 tbsp cornstarch (optional, for extra crispiness)

- 1 tsp baking powder (optional, for lift)

 For the Buffalo Sauce:

- ½ cup hot sauce (e.g., Frank’s RedHot)

- ¼ cup unsalted butter (or vegan butter), melted

- 1 tbsp honey or maple syrup (optional, for sweetness)

- 1 tsp apple cider vinegar (optional)

 For the Blue Cheese Dip:

- ½ cup sour cream (or Greek yogurt)

- ½ cup mayonnaise

- ½ cup crumbled blue cheese (plus extra for garnish)

- 1 tbsp lemon juice

- 1 small garlic clove, minced

- 2 tbsp milk or buttermilk (to adjust consistency)

- Salt and pepper to taste

- Optional: Chopped chives or parsley for garnish

Focus on creamy, tangy dips with chunky blue cheese, often paired with Greek yogurt or sour cream

  Instructions:

1. Prep the Oven & Cauliflower:

   - Preheat oven to 450°F (230°C). Line a baking sheet with parchment paper or a silicone mat.

   - Cut cauliflower into bite-sized florets; discard stems.

2. Make the Batter:

   - In a bowl, whisk together flour, milk, garlic powder, paprika, salt, pepper, cornstarch, and baking powder until smooth.

   - Dip each floret into the batter, shaking off excess, and place on the baking sheet. Avoid crowding.

3. Bake:

   - Bake for 20-25 minutes, flipping halfway, until golden and crispy.

4. Prepare Buffalo Sauce:

   - In a saucepan, mix hot sauce, melted butter, honey (if using), and vinegar. Warm over low heat.

   - Toss baked cauliflower in the sauce until coated. Return to the oven for 5 minutes to set (optional for extra crispiness).

5. Make the Blue Cheese Dip:

   - Combine sour cream, mayo, blue cheese, lemon juice, garlic, and milk. Season with salt and pepper. Chill until serving.

6. Serve:

   - Arrange cauliflower on a platter with celery sticks and carrot sticks. Garnish dip with extra blue cheese and herbs.

Air fryer methods dominate searches for achieving crispiness without deep-frying

  Tips:

- For extra crunch, use a wire rack on the baking sheet.

- Adjust hot sauce quantity to control spice level.

- Vegan? Use plant-based milk, butter, and a vegan blue cheese alternative.
